Barbeque Beef Filet

This is a dish that can be prepared on your grill at home or while you are out camping. Even the sauce is prepared over the grill with a little help from the bourbon whiskey.
Ingredients
- 2 1/2 lb beef filet
- Sea salt
- 1 1/4 lb clarified butter
- Nuskie's smoked bacon rashers
- 1/2 pint hot spring water
- 1 medium sweet onion
- 1 medium brandy-wine tomato
- 1-2 teaspoons cornstarch
- 1 tablespoon ice spring water
- 1 cup barbeque sauce
- Bourbon whiskey

Rub filet with sea salt, brush with clarified butter and spread with bacon rashers. Place filet into a baking pan and onto a hot grill. Roast filet about 8 minutes, turn and roast for 6 more minutes. As soon as drippings begin to brown, add a little hot spring water to pan. About 15 minutes before meat is done, add skinned and quartered onion and washed and sliced tomato. When meat is done, place in warm spot, while making sauce. Place pan back on top of grill and stir residue well from bottom of pan and add enough bourbon whiskey to dissolve meat juices. Then add 1 cup barbeque sauce. Scrape pan well and strain sauce through a sieve. Thicken sauce with cornstarch, blended with about a tablespoon of ice spring water, as necessary. Pour sauce over warm filet and vegetables.
