Chicken thighs are marinated in Thai chili paste, mirin, & tamari sauce, then grilled and wrapped in a lettuce leaf with a seasoned cucumber mix.
Combine marinade ingredients together in large Ziploc bag; add chicken thighs; seal bag and keep chilled overnight. Mix cucumber salad ingredients together in a bowl, cover and chill until ready to serve. Preheat grill and lightly grease grill rack. Remove chicken from marinade and place on grill; grill for 8 minutes, turn and cook until cooked through. Serve chicken in a lettuce leaf cup with serving of cucumber salad and bundle the wrap closed and tie with a long sprig of chive.
