Bacon Wrapped Chipotle Bratwurst with Onions


These perfect brats are great for summertime or when you are longing for summertime. They make a perfect addition to any big game.



Ingredients:

  • 2 cups butter, room temperature, divided
  • 2 teaspoons garlic powder
  • 1/2 teaspoon garlic salt
  • 1 teaspoon dried parsley leaves
  • 8 6 inch hoagie rolls, split
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 cups yellow onions, finely sliced and separated into rings
  • 2 canned chipotle peppers, chopped
  • 3 tablespoons adobo sauce (from the canned peppers)
  • 8 bratwurst links
  • 8 slices bacon

Method

Preheat an oven to 375 degrees. In a small mixing bowl, combine 1 cup butter, garlic powder, garlic salt, and parsley. Using a fork, mix until everything is well combined. Spread an equal portion of butter mixture on each cut side of hoagie rolls. Place hoagie rolls, cut side up, on a large cookie sheet. Heat a large cast iron skillet, over medium heat for 2 minutes. Place 1/2 cup butter, cumin, salt and black pepper in hot skillet and heat until butter is melted. Add onions, chipotle peppers, and adobo sauce to butter mixture, continue to saute for 2 minutes or until onions have softened. Remove from heat and transfer to a 9 x 13 x 2 baking dish. In the same skillet, melt another 1/2 cup butter. Add bratwurst links and cook, turning frequently, for 5 minutes or until lightly browned. Remove links from heat and wrap 1 slice of bacon around each link. Place links in onion mixture. Bake for 35 minutes or until links and bacon are cooked through. Place hoagie rolls in oven with brats and bake 4 minutes or until golden brown. Remove onions and bratwursts from oven. To serve, place one bratwurst on a hoagie roll and top with an equal portion of onions. Continue process for remaining brats and serve.
