Asian-Glazed Salmon

Grilled salmon fillets are brushed with a glaze of soy sauce, apricot-pineapple spreadable fruit, vinegar, garlic, ginger, and red pepper flakes.
 

Ingredients

  • 1/4 cup soy sauce
  • 2 Tbsp apricot-pineapple spreadable fruit
  • 2 tsp bottled minced garlic
  • 2 tsp rice wine vinegar
  • 1/2 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes
  • 4 (6 oz) salmon fillets

Method

Mix first six ingredients in a small bowl. Spray grill with non-stick cooking spray and heat to medium-high heat. With a sharp knife score each salmon fillet diagonally 4-5 times, about 1/4-inch deep. Place fish, skin side down, on grill; spoon on sauce, allowing sauce to penetrate into the scored areas. Carefully turn fish over after about 4 minutes and grill on other side about 4 minutes. Turn fish again and baste with more sauce, cover grill and grill for 2-3 more minutes until nicely glazed and fish flakes easily with a fork.

 

Notes: This salmon dish takes less than 1/2 hour to prepare from start to finish (if using a gas grill) but is truly company-worthy. My husband and I love it so much we make it all winter using the broiler instead of the grill. The sweet, savory, garlicky glaze is addicitve--great on chicken, too.
