Ala Moana South Pacific Baby Back Pork Ribs

These ribs are tender and full of flavor--just simmer in seasoned broth, then brush with a sweet and spicy sauce while smoking on the grill.
Ingredients
- South Pacific Rim Marinade:
- 5 tablespoons white miso (shiro miso)
- 2/3 cup hoisin sauce
- 1 1/2 tablespoons minced ginger
- 1 1/2 tablespoons minced garlic
- 1 1/2 tablespoons sake
- 1 1/2 tablespoons soy sauce
- 2 teaspoons sugar
- 1 tablespoon chile paste with garlic
- Ribs:
- 2 lbs baby back pork ribs
- 3 qts chicken stock
- 1 tablespoon minced ginger
- 2 teaspoons minced garlic
- 2 tablespoons fresh parsley
- 2 tablespoons fresh minced marjoram
- 2 tablespoons fresh minced cilantro

Method
Combine marinade ingredients together in a bowl and refrigerate overnight. Place ribs in a large saucepan with chicken stock, ginger, garlic, parsley, marjoram and cilantro then simmer about 30 minutes or until tender. Remove ribs and immediately brush South Pacific Rim Marinade and let cool. Meanwhile, prepare grill and soak some kiawe or mesquite wood chips in water, in preparation for smoking ribs. Brush ribs again with marinade before roasting, and slowly cook ribs over wood chips, on a covered grill, until nicely browned and smoky, 15-20 minutes. Serve with extra South Pacific Rim Marinade on the side.
